I had a really tough week last week. Can’t really put my finger on what made it so difficult but I was desperate for inspiration and motivation. I somehow always find that in this clip from an old Jay Z interview. Favourite quote from this clip:
“I could’ve easily been like, ‘Wow, maybe what I’m talking about ain’t right. No one wants to sign me.’ I could’ve easily said that. That was the easy way. That would’ve stopped the suffering… but I didn’t.”
Film
I heard Carey Mulligan speak about Promising Young Woman, of which she is the star, on Armchair Expert and this piqued my interest. I’m definitely more of a RomComs-For-The-Pain kind of girl but this revenge film has a truly delightful twist. It’s dark, horrifying yet exceedingly funny. I personally cannot stand spoilers; if you can actually not even tell me what a movie is called, that would be GREAT; so I’m going to stop here but it’s a total must-watch.
Food
Another thing that really lifts me up when I’m feeling down is super zingy, flavourful food. I love spicy, salty things that I can eat with my hands and this sweet potato toast (still can’t eat bread!) topped with pico de gallo is just that.
You Will Need:
1 large sweet potato, thinly sliced lengthways
Small handful fresh coriander
Salt, to taste (for this amount, I honestly use about a tsp #saltfreak)
1/2 tsp cumin
Juice of 1/2 lemon
1/2 onion, finely diced
1 tomato, finely diced
1 clove garlic, crushed
1 small red chili, chopped (keep the seeds if you want it spicy, remove them if you just want to add bite)
Method:
Place sweet potato slices in a 200°C oven to bake for 12-15mins
Prepare you pico de gallo by tossing together the onion, tomato, garlic and coriander with lemon juice and spices
Remove sweet potato slices from oven once slightly golden and crispy, top with pico de gallo and enjoy.
I swear I'm not a potato enthusiast 😂 but this recipe, also the pictures are so aesthetically pleasing 👌🏾👨🏾🍳 I'm definitely going to try that out without the tomatoes lol. The consensus for promising young women has been so in-between. I'm a spoiler kinda gal and it's made me intrigued to see the movie (I read the reviews etc)
